Why do you have to let steam out of pies?!


Question: Why do you have to let steam out of pies?
I have just been bought a porcelin blackbird to put in pies to let the steam out. I've just made a pie, which was lovely but am sat here wondering the science is behind using this?

I know putting holes in the top does the same thing.

I think it's so the steam can escape from inside the pie and so doesn't make it all soggy and flat. Making a few little cuts on the top does the same trick.



If you don't provide an outlet for the steam that will build up under the crust, it will forcefully find one eventually by sheer science but it may blow your filling out with it.....

if you don't let the steam escape your pie could explode
Putting a hole in the middle with a knife does the same -lets out excess steam



So that the crust doesn't get mushy or billow up and fall apart.

b/c then it might explode creating a mess or the insides would burn or when you cut the pie you might get steam burns
