I do a cheese dip in the crock pot and found that adding a folded couple of paper towels under the lid helps to keep the condensation from dripping down into the dip.
Also, as a cheesy dip, it thickens as it cools a bit.
Exactly what are you making?

Not knowing what kind of dip it is makes this difficult to answer, but I would use instant potatoes.

It is a good thickener and will thicken almost instantly.

Rice on the other hand you'd have to strain it out after about 20 minutes, and I am not sure it would work anyhow.

And if it's cheesy, it'll taste fine!

Add flour, don't add rice unless it's a rice dip. If you're afraid it needs so much flour that it'll taste like flour mix equal parts flour and cream or butter depending on your dip.
