why can't I form nice matza balls?!


Question: Why can't I form nice matza balls?
I follow a recipe I found in a book to the letter and when I try to form the matza balls I can't because the mixture is too gooey. It sticks to my fingers. When I get matza ball soup at a diner the balls are nice and round. How come it's not working for me?

matza ball soup recipe: 3 tblespoons of matzo mix
salt & pepper
seltzer
1 tablespoon of flour
3 tablespoons of almond flour
1 egg
1 egg white

Mix all in a bowl, Refrigerate for an hour and then make balls out of them and put them in boiling broth- This is supposed to make 12 servings (I'm guessing that means 12 balls) They won't form into balls though! :(

The mix has to be chilled, and you need to wet your hands in water before forming each ball.

My cousin crushes matza crackers and then just adds egg salt and pepper...I mean it's her own style but it worked...maybe it'll work for you? Just stick those crackers in a food processor and add an egg I guess and salt and pepper.

If you want to stick to your recipe then add more flour if it's too wet, you don't want it dry either. And then put your hands in flour grab some dough and form the balls. They won't form with bare hands, floured hands work best.
