Question: For this recipe, why dont we need to dip the chicken in egg first?

I thought, when you are deep frying things, its better to dip it in egg first to make it stick more?

Buffalo chicken wings are never battered, the spicy seasoning sticks to the skin well enough

If you let it sit with an egg wash it would get all gummy. The original recipe for Buffalo wings had no breading, only the wings deep fried then dipped in the sauce of half butter and half Tabasco sauce.



The only time you need egg or milk before frying is to coat it in a breading mixture. Since these are not breaded there is no need for the egg. Good luck with the wings!
