Question: Desperate need of dinner ideas!!!!!!!!?
I recently went back to work after 10 yrs of being home with the kids and unfortunately i am working a lot of nights. My husband is certainly a grill master but when it comes to being in the kitchen he sure isn't Betty Crocker!

What i am looking for is some simple ideas for dinners i can make ahead and that i can have my daughters heat and serve! I have a few like lasagna of course and chicken and broccoli bake and sometimes i throw something in the crockpot and just tell them when to turn it off....... but i need some other ideas so that they aren't eating all the fast food and take out my husband orders for them or getting bored with my very few meals!

Chicken Casserole
2 lb Boneless chicken, diced
2 Eggplant, chopped
2 Zucchini, chopped
2 Potatoes, chopped
?lb Green beans, sliced
1 Carrot, chopped
2 Tomatoes, chopped
4 Green peppers, chopped
?T. Olive oil
1 T Tomato paste
?C water
Salt & Black pepper
Brown the chicken in the oil and transfer to the casserole dish.
Add all the ingredients in a casserole. Add water.
Cook at medium heat for 45 minutes.
Serves 4.

Cheesey chicken casorole
4 chicken breasts
1 can cream of chicken soup
1 1/3 cups water
3/4 cups rice
1/2 teaspoon onion powder
1/2 cup cheddar cheese
Optional 2 cups vegetables

Combine all ingredients minus chicken and stir.
Place chicken breasts on top of mixture.
Bake at 375 degrees for 45 minutes or until done. Top with chesse let sit for about 5 minutes.

Chicken alfredo
Fry 2-3 chicken breasts
Boil pene noodles
Add chicken and sauce to noodles
Warm fresh bread
Takes like 30-40 minutes tops



this sounds a but lame, but channel fours comedinewithme, put all there recipes on the channel four website...perhaps that could help?



Try a tamale pie in your crockpot. Spray the crock pot with pan spray, then layer the following ingredients:
corn tortillas
canned chili with beef (I prefer Dennisons' Chunky Chili Con Carne with Beans)
shredded mexican cheese mix
canned chopped mild green chilis

When you get to about 3 inches from the top, pour a large can of green enchilada sauce over the whole thing, using a butter knife to move the casserole away from the sides so that the sauce can drizzle down to the bottom. Cook on low. Have your daughters turn the power off and let the casserole sit for about 10 minutes before serving so it's less watery.

Another recipe--beef chili

Put the following into your crock pot:

1-2 packages stewing beef
1 large can beef broth
chili powder (I usually put about 2 tablespoons; adjust according to your family's taste)
1 package chopped onions (I buy the pre-chopped)
1 large can chopped tomatoes
2 corn tortillas shredded into fourths
1 package chopped bell peppers (I buy the pre-chopped)
1 tablespoon garlic powder
Cook on Low all day

1/2 hour before serving add:

2 cans of beans
more shredded tortillas if it needs thickening
more chili powder if you want it spicier
shredded cheese, if desired

Give it a good stir before serving to break up the tortillas well. Garnish with tortilla chips and cheese.


Pot Roast

Ingredients:

1-3 pound chuck roast
1/4 cup worcester sauce
1 small can beef broth
chopped onions and bell peppers
garlic powder or 1-3 cloves garlic
vegetable oil

Pour vegetable oil into a large pan with lid. Sear the roast until it's brown on the outside. Add first, the broth and worcester sauce, then add garlic, onion and bell pepper. Simmer for 1-1 1/2 hours on the stove. Save the juice for gravy. Makes good take-along lunches for the microwave and good beef sandwiches.
