Question: Good recipes vegetarian buffet recipes for pregenant women?

I need a good vegetarian recipe for pregnant women that can be served at a buffet. I need this for a school assignment and I have to be able to cook it in the confined space of the school kitchen (no way can I have more than one thing going at a time) and I have to be able to cook it in 55 minutes or under. Thanx :)
