Cake/icing ideas for babies first birthday?!


Question: Cake/icing ideas for babies first birthday?
I am looking for a cake recipe for my daughters first birthday. I've never really baked many cakes from scratch so I need a lot of help lol. I am Iooking for something light, and preferably not chocolate. Something that would be light on the tummy. Including the icing.

For my nephews first birthday I made a banana cake, cuz what kids don't like bananas? I also made a bana filling which is amazing, but a little on the heavier side which you may want to omit

Cake-
Ingredients: 1/2 cup butter, 1 cup sugar, 2 eggs, 2-1/4 cups flour, 1/8 teaspoon baking soda, 2 teaspoons baking powder, 1/2 teaspoon salt, 1/4 cup milk, 1 cup mashed bananas

Method: Cream shortening and sugar. Add beaten eggs, then sifted dry ingredients alternately with the sweet milk. Beat in the mashed bananas (2 to 3 put through a sieve). Bake in two 8-inch layers in moderately hot oven (375°F) for 30 minutes

Icing-
Ingredients: 1/2 cup water, 1 1/2 cups granulated sugar, 2 tablespoons light corn syrup, 3 egg whites, 1/2 teaspoon cream of tartar, 1 1/2 teaspoons vanilla extract

Place water, corn syrup, and sugar in a saucepan. Stir, cooking, until sugar is dissolved. Boil to about 232 to 236, or until syrup spins a thread when a little is dripped from a spoon.

Place egg whites and cream of tartar in clean, grease-free bowl. Beat with hand-held mixer or wire whisk attachment of stand mixer until egg whites begin to hold their shape. Continuing beating, gradually adding hot syrup in a thin, steady stream, about 1 to 1 1/2 minutes. Add vanilla and continue beating for about 5 minutes or until frosting loses gloss and stands in stiff peaks. Frost cake immediately. This makes enough to frost a large angel food or 2-layer cake.

Banana filling-
3/4 cup evaporated milk, 3/4 cup granulated sugar, 2 egg yolks, 3 tbsp butter, 2 mashed bananas(more if desired), 3/4 cup chopped nuts (personally never used nuts, it doesn’t need them!),
1 tsp vanilla

Cook milk, sugar, egg yolks and butter over medium heat, stirring constantly until thick (12 – 17 mins). Add banana, nuts and vanilla. Cool stirring occasionally until of spreading consistency.



ok for the cake, make a simple white/yellow/chocolate cake

for the icing cream together

4 sticks of butter
3/4 cups cream cheese
6 cups icing sugar

cream the butter and creamcheese together, until smooth, and slowly add in sugar mixing in 1/2 cup at the time.

i swear, this icing isnt like those crappy sweet ones, and its not buttery or greasy, its amazing i can assure you:)
