Question: What is your go to meal? A recipe that is easy, but so yummy!?
I like Spaghetti Carbonara because it is so easy, but I'm always looking for simple dishes that quick and simple. Something you could write out and not have to cut and paste.

Answers:

Buy a large chicken, wash and pat dry thoroughly. Stuff with a quartered lemon, a quartered onion, and an entire head of garlic separated into cloves and peeled. Oil skin lightly, salt and pepper it, and paprika and a sprinkle of dried Italian herbs. Roast on a bed of potatoes and carrots for two hours at 325; drumstick needs to wiggle freely in socket, and skin should be crisp and brown, with tender veggies. Use the garlic to spread on bread and squeeze the lemon into the pan juices with a little white wine; carve chicken after letting rest for 20 minutes out of the oven, and serve chicken sliced with pan juices and vegies. Green salad or a steamed green vegie's good with this.



I get packs of this frozen chicken strips, from any supermarket or butchers!
Simply defrost, cut into strips, pan fry it with some chicken flavouring/spices, like peri-peri from nando's mm, then you can eat it as it is, put it into some fajitas and add some pepper and onion, or you can pop it in to a stir fry with those stir fry veg packs you can get!
or you can even go simple and have it with chips, its such an easy meal! and so tasty!

For sweet:

then a low fat snack frozen fruit mmm! put grapes, oranges, etc. into a bag in the freezer,
or get some apple, cook it in a pan and add some cinnamon, such a nice dessert in winter, if its not sweet enough add sugar or syrup.



This is a simple tomato sauce that tastes so thick and rich you'd think it was stirred on a hot stove all day long.

the trick is caramelizing the sauce in the oven

take two cans of tomato paste and one can of diced tomatoes
pour them into an oven safe dish
add a big spoonful of minced garlic (or a few shakes of garlic powder)
a pinch of italian seasoning
crushed red pepper to taste
a pinch of salt
and a tablespoon of extra virgin olive oil

mix all the ingredients well and put the dish into a 400 degree oven for about 45 minutes to an hour
(you'll smell it when it's done it makes the whole house smell like an italian restaurant)

I like to serve it over buttered and peppered fettucini

being a vegan I also like to put a a bag of frozen "california mix" (cauliflower, broccoli and carrots) on a baking tray with potatoes cut into small wedges, toss it all with olive oil, salt, pepper and crushed red pepper and bake until it all nice and crispy and caramelized

that's an easy dinner

Another easy meal is italian dressing chicken. Taking boneless skinless chicken breast, drenching it in italian dressing, adding parmesan cheese on the top and baking it at 350 for about an hour or until you think it's done. Serve with spinach or green beans



Easy and can use leftovers over salad greens for next days lunch. I've also used dijon mustard, but skip the sour cream. The amounts are going to depend on your fillets. I usually use a pound to a pound and a half, cut into fourths. :

salmon fillets,
salt, to taste
Freshly ground pepper, to taste
1/4 c. reduced-fat sour cream
2 tablespoon(s) stone-ground mustard
lemon juice
Lemon wedges

Directions

1. Preheat broiler. Line a broiler pan or baking sheet with foil, then coat it with cooking spray.
2. Place salmon pieces, skin-side down, on the prepared pan. Season with salt and pepper. Combine sour cream, mustard and lemon juice in a small bowl. Spread evenly over the salmon.
3. Broil the salmon 5 inches from the heat source until it is opaque in the center, 10 to 12 minutes. Serve with lemon wedges.



I make Macaroni and Cheeseburger. brown a pound of ground beef, drain it and rinse it in hot water. I don't like the fat on it. Then I make 2 boxes of macaroni and cheese, and toss it all together with a can of V-8. You could use diced tomatoes or whatever but my kids hated any kinds of vegetables and the V-8 hides. You could use a package of chili seasonings and a drained can of beans too, for more servings or just a different taste.

A similar recipe called Cowboy Beans is always a hit.

Brown a pound of ground beef, drain and rinse.
Cut a pound of bacon into 1" pieces, brown, drain and rinse.

Combine them in a large pot, Dutch oven or something big...I use my wok.

Add 4 drained and rinsed cans of assorted beans. I use white, black, garbanzo and pinto usually, but any mix you like is fine.

Now add a package of onion soup mix, a cup of BBQ sauce and a cup of sugar. You can cut back on the sugar if you want.

Stir it all up until it's well mixed and hot all the way through. Serve over pasta or rice. I like to use wagon wheel pasta to keep with the cowboy theme. This feeds a ton of people, and is very popular with men, women and young people too. I had it at a baby shower and got the recipe before leaving. People ask me to bring it to pot lucks now. Not exactly health food, but fun and filling and it tastes good.



POT ROAST


heat oven to 325 degrees
put one, 2 1/2lb pot roast dredged in 1/4 c flour in a large pot with 2 tbsp of hot oil, brown on all sides.
Add 1/2 cup beef stock, 1/4cup balsamic vinegar , one bay leaf a pinch of thyme, one large onion quartered or 4 small halved, add 4 carrots cut in half.
1 head of garlic seperated and peeled
Put in oven covered for 2 1/2hrs take out roast and set aside, thicken gravy with 1/2c cold water poured in to 1/4 c of flour stir and add to simmering juices.
Juices must be almost boiling to get a thickened gravy. serve with mashed potatoes and corn



what my family calls stuff in a pan:
1 pound of meat, this can be diced steak, pork, chicken or even ground meat
mixture of sliced veggies of you choice or whatever is on hand
1/2 cup broth (beef or chicken)
brown meat then add veggies season to taste add broth, if you do not add potato or rice to the pan, then serve over rice, potato or noodles.



Pound chicken breasts to an even thickness. Dust in flour. Float in egg. Coat in breadcrumbs. Place on an oiled baking sheet. Bake at 375 for 9 minutes, flip. Bake another 8 minutes. If desired, place a tray of trimmed asparagus that have been oiled and salted in the oven after the chicken has been flipped.



I've been known to do frozen tortellini tossed with pesto. And taco meat mixed in with a box of mac and cheese. Black beans and rice is pretty easy too after all the chopping of the veggies.



Mine is grilled chicken breasts. We just grill a bunch and use them for enchiladas, tacos, sandwiches, salads etc.
