I do mine in the microwave for about 6 minutes. Stuff with either red hot candies or brown sugar and cinnamon with a dab of butter. cook covered with plastic wrap.
My grandmother made wonderful baked apples. She'd cut the core out of the apple, and take a circle of peel off about 1/4 of the way from the top. Then she'd stick butter and cinnamon and sugar in them, and bake them in the over for about 40 minuets or so. The whole house smelled wonderful.
These days, I use one of those corer/slicer things, and lay the apple slices in a microwavable pan. I dump some brown sugar on them, stir them up and microwave until tender. You could probably use artificial brown sugar type sweetener, but I hate fake sugar. If you use Delicious apples, you need less sugar.
Baked Apples Recipe
Ingredients
4 large good baking apples, such as Rome Beauty, Golden Delicious, or Jonagold (see cooking apple varieties)
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup chopped pecans
1/4 cup currants or chopped raisins
1 Tbsp butter
3/4 cup boiling water
Method
1 Preheat oven to 375°F. Wash apples. Remove cores to 1/2 inch of the bottom of the apples. It helps if you have an apple corer, but if not, you can use a paring knife to cut out first the stem area, and then the core. Use a spoon to dig out the seeds. Make the holes about 3/4-inch to an inch wide.
2 In a small bowl, combine the sugar, cinnamon, currants/raisins, and pecans. Place apples in a 8-inch-by-8-inch square baking pan. Stuff each apple with this mixture. Top with a dot of butter (1/4 of the Tbps).
3 Add boiling water to the baking pan. Bake 30-40 minutes, until tender, but not mushy. Remove from the oven and baste the apples several times with the pan juices.
I would raise the temp and leave them in there another ten minutes.

I recommend avoiding any so called Delicious apples, the stink for cooking. I've had the best results with Ginger Gold apples. I also suggest 375 for your temp. I usually core the apple, stuff the opening with butter, brown sugar, and a dash of cinnamon (raisins optional) and bake for about 40 minutes. Make sure you test for tenderness before you remove them from the oven.
The cooking time sounds right. What kind of apples did you use. Golden delicious is the best to use for baked apples, because they're kind of mushy to begin with. If you use something like a Fuji or Granny Smith, you'll likely end up with hard apples no matter how long you bake them.
Cook then a pan on the stove with some sugar and cinnamon then put in the oven for 20 minute at 350 degrees.
