Question: Need help with shrimp stuffing to go inside fish fillet?
Anyone have a recipe i could use for shrimp stuffing. I have shrimp and bread crumbs what else i need? Help please

I'm a cheese or cream cheese fan. Here's a suggestion:

Baby shrimp
Chopped green onion
Squeeze of lemon juice
Bread crumbs
Borsin herb and garlic cream cheese

Blend and stuff.



You can use various kinds of grains (bread crumbs, rice, etc), and often various kinds of dairy, as well as any seasonings you want, to make stuffings for fish (also called "roulades" even if they're not exactly rolled up).

I love the "Stuffed Sole Monterey" by Sonoma that I get from the store when it's available, and the ingredients for that filling are:
...bay shrimp
...cottage cheese
...Monterey Jack cheese
...breadcrumbs
...minced onions

(Schwans’ version is similar:
imitation crabmeat... shrimp... rice...cottage cheese... Montery Jack & mozarella cheeses)

Shrimp
Breadcrumbs
Onion (of some sort ... minced onion, shallot, scallion)
Garlic clove, minced
Lemon zest
Minced fresh parsley
Salt
Pepper
Red pepper flakes, optional
A bit of cream or olive oil to bind

EDIT: To give you step by step

Poach the shrimp just until no longer translucent, cool and mince. Place in a bowl with half as much seasoned breadcrumbs. Add 2 tablespoons minced onion (I would use shallot), then more to taste. Add a minced garlic cloves, add the zest of a lemon, add 2 tablespoons minced parsley. Season to taste with salt, pepper and red pepper flake. Bind the mix with some heavy cream or olive oil. Use to stuff fish fillets, clams, oysters or as a topping for lobster in the shell.



I would have listed the same ingredients as Tom but would also add some finely diced mango
