They probably make it with Texas toast, american cheese and margarine.
Couple things:
- Use thick sliced bread, like "Texas" toast
- Use real butter (salted butter, not sweet) and don't skimp.
- Use American cheese, more than one slice if you must, to cover the bread from crust to crust
- Add a layer of shredded mozzarella - not for the taste but for the *texture*. It makes a lovely, gooey sandwich.
Because the bread is thicker, cook at a slightly lower temperature so the middle melts completely and you don't burn the outside.

I think my grilled cheese sandwiches are every bit as good as the ones I've had in restaurants. Those usually don't have enough cheese on them. They use bigger bread but still two slices of cheese.
I butter the bread with an olive oil type spread, usually I Can't Believe It's Not Butter Mediterranean, and place both slices butter side down on my grill. I put the cheese on both pieces and usually a couple thin slices of tomato. Then when they're the color I like, I put them together into a sandwich.
I recently read that you can use mayonnaise instead of butter or margarine. I remember someone who did that when I was in college and they were pretty good.
i got a good recipe for fried cheese sandwiches, mix one egg in a bowl on its own, two slices of WHITE bread and slice some RED cheese. put some BUTTER in a frying pan and go to make a usual sandwich but dont use butter or marge in it, cut them into four and dip each one in the egg making sure all of it is covered in egg, put them in the frying pan and fry till golden, heart attack on a plate maybe, but delicious.

If you like more bread use texas toast.
Usually they use American cheese and use Plenty of butter on the bread.
Use a medium high heat, you don't want it to burn before it browns but you want it to get good and crisp.
I've never had a restaurant grilled cheese that was half as good as home made.
When you cook it put a Lid on it with a bit of Butter underneath it then steam it for more flavor!
