Question: Any good recipe for roasted chicken breast with vegetables?
its my first time im going to roast something in my new oven :)
i want prepare something tasty for my husband, i have chicken breasts, green beans carrots,potatoes,small little tomatoes.
any good recipes to make a tasty roasted dish of chicken and vegetable il appreciate it,
thankssssssss

Answers:

Sauté the chicken breasts first in some hot oil with crushed garlic cloves.
Par-boil the small potatoes, cut in half if desired, to speed cooking.
Peel & slice the carrots into coins. Trim & French-cut the green beans.
Arrange the vegetables in a baking dish, place chicken breasts on top.
Pour some chicken stock, or mushroom soup mixed with milk, over all.
Sprinkle with poultry spice over all, bake at 350F for 30-40 minutes.



My go-to roast chicken and veggie recipe:
Ingredients:
1 roasting chicken
4 tbsp butter, soft
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 onion, cut in half
1 lemon, quartered
3 carrots, peeled and quartered
2 potatoes, peeled and quartered
1 pkg cherry tomatoes
1 can chicken broth
Diections:
Preheat oven to 350 degrees. Rub your hand under the chicken skin to loosen it. Combine butter and spices, then rub under the skin. Give it a good rub. Stuff the cavity with onion and lemon. Place in a 9x13 pan and add veggies and chicken broth around chicken. Bake, uncovered, until skin is golden. Cover with foil and continue to bake until veggies are tender and chicken juices run clear wen you pierce the drumstick at the thickest point. Remove from oven and let cool 15 minutes before carving chicken. I like to reduce the pan juices over 2 burners on med-high to create a nice au-jus sauce. You can use a nice white wine in place of all or some of the broth. Yum.
