How do you cook with blood oranges?!


Question: How do you cook with blood oranges?
All I know is some people put them on fish. They aren't good enough to eat plain. I bought some and don't want to waste them...any ideas? ;}

Answers:

You could make a good dressing out of them and put the segments on a spinach salad. Saw that on food network....



Fancy a cocktail?

Blood oranges Mexicano

Ingredients
2 blood oranges
2 tablespoons superfine sugar
2 tablespoons Freshly squeezed lime juice
1 1/2 oz. Tequila
3/4 oz. Cointreau

Method
Peel the blood oranges and cut into rounds if membranes are tender, or section and remove membranes if they are tough. Sprinkle the blood orange pieces with the sugar.

Squeeze the lime juice over the fruit and gently mix until all pieces are well coated. Macerate in the refrigerator.

Just before serving, add the liqueurs and stir together. Serve in stemmed glasses

How about a marmalade?

Ingredients
1 cup thinly sliced, seeded [if necessary] blood oranges
1/4 cup thinly sliced, seeded oranges
2 1/4 cups water
2 1/4 cups sugar

Method
Combine the sliced oranges and water in a large pot. Bring to a boil and cook rapidly for 20 minutes or until tender. Add the sugar and cook over low heat, stirring until the sugar dissolves. Turn up the heat and boil rapidly about 40 minutes until the bubbling stops and the fruit becomes opaque, or until a candy thermometer reads 220°

Remove from the heat, skim the foam from the surface and let cool for 5 minutes. Stir to distribute the fruit throughout the syrup. Cool completely. The marmalade can be stored in the refrigerator for 5 days.



Use them pretty much the same way you would regular oranges. They're more tart, though, so you will probably have to adjust seasonings a bit. Make orange chicken, sorbet (super delicious), juice, even marmalade (I'm planning to make marmalade with this year's crop from our tree).



I personally use a stove.
