Question: THis is about french fries?
I am making french fries tomorrow and just wanted to know after blanching french fries, what is the maximum time that I can hold them before I would have to fry them? Im not freezing them, just resting on the table. Thanks

you can keep them in cool water for quite some time before you have to cook them but you don't need to blanch them. The trick to really crispy french fries is to fry them twice... after removing the potatoes from the water, make sure to pat dry them really well, I mean DRY. Place them in a fryer (do not over crowd, do in batches if necessary) and fry at 350 degrees for five minutes. Remove and let rest on a paper towel, cook remaining potatoes same way. THEN... do this process another time, this time letting them sit in the oil an additional five minutes. Remove, place on paper towel and salt immediately.

Don't blanch

Pre-fry but don't allow them to get brown about 4 or 5 minutes - remove and let cool

When your ready for the fries - return to the fryer and fry till a crispy brown

This allows the fry to cook and then when returned to finish the fry they will be a very crisp fry

Don't blanch, pre fry and drain well. And you don't need 5-6 minutes. Really 2-3 min TOPS.

You can keep them for hours, even a full day.
