How should I freeze this pie recipe for later?!


Question: How should I freeze this pie recipe for later?
I'm going to make chicken, leek and tarragon pies (double-crust). The recipe makes 4, but I want to eat one straight away and keep the others for another day...

Should I completely make and cook all the pies, then freeze the ones I want to save and thaw and reheat on the day?

Should I assemble the pies I want to save and freeze them, then bake on the day? (If so, could I bake them from frozen or would I have to defrost first?)

Should I just freeze the filling, then thaw it and put it in the pastry to bake on the day?

Answers:

If it were me I would make the filling and freeze it..Then make a fresh crust for the pie on the day you want to serve it...
