Question: FAVORITE VEGGIE RECIPE?
I dislike veggies- A LOT A LOT, but need to eat more, so I am looking for some HEALTHY vegetable recipes to try out and spruce up my recipe collection!!

This wouldn't go on the top of the HEALTHY list, but this is one we like and my kids would always eat it. One of them used to swallow the veggies on his plate whole because he hated them so much.

Squash Casserole (Yep, you can make it a main course)

Chop up as much zucchini as you've got - at least two.
Chop up an onion.
Saute them in a pan with a little olive oil and add garlic toward the end of the sauteing time.
Mix together in a large bowl:
zucchini/onion mixture
1 package of herbed dressing mix
Couple of handfuls of grated cheese
Can of cream of something soup
Mix well, place in greased casserole dish.

You can add shredded or chunked chicken (cooked). You can add all sorts of other veggies. I have made this with green beans, carrots, you name it. But we like the squash the best.



You can cook spaghetti squash exactly like spaghetti. Buy a spaghetti squash (they're yellow and a little bigger than a cantaloupe). When you get it home, cut it in half and put each half in the microwave for about ten minutes. When the squash is soft, you can scoop out the inside part and the texture and color makes it look a lot like spaghetti. While it's still hot, douse it with whatever kind of marinara sauce you like and eat it like regular spaghetti!



Primavera, mix various vegetables like zucchini, carrots in marinara sauce. I like to take mushrooms, zucchini, onion, bell peppers, yellow squash, etc., and marinate them and grill them (like a good Italian dressing or there is an Asian Sesame Ginger dressing that is good). Stir fry different vegetables and place on angel hair pasta and then grate some fresh parmesan. Also, steamed vegetables (just until tender but still a little crunchy) with lemon, garlic, salt and pepper.



Potato pancakes and add some shredded cabbage (you will barely even taste it).

Shred or grate 2 potatoes
add 2 eggs
grate in some onion and a piece of cabbage
add turmeric
parsley
pepper (if you want)
a pinch of salt
mix well

Heat a pan (medium heat) with a little oil in it and when the oil is hot add a large spoonful of the potato mixture. Use the back of the spoon to push it down a little so it will be somewhat flat like a pancake. Add a few more spoonfuls the same way (depending on the size of your pan). Turn when brown on one side to brown the other side. Drain on paper towels and serve with apple sauce, sour cream or plain yogurt.
