How to keep my pots and pans clean and new?!


Question: How to keep my pots and pans clean and new?
Ive never used nice sets before but my daughter is now 2 and I do a lot cooking and decided to purchase few cookwares from Calphalon after hearing a lot of good things about them.

I have there simply calphalon non stick omelet pan and couple stainless steel pots I plan on using for light cooking and boiling water.

I used the non stick pan just once today to fry a fish fillet. The pan washes wonderfully with mild soap and sponge. But the outside already has sticky residue that I can't get off with soap and water.

Also, stainless steel wasn't used too much yet but everytime i cook in it I get something stick. Not too much but enough that I can't just clean right after. Is it okay to soak stainelss steel pots in water over night? how about non-stick pan?

What kind of utensil should i use to handle stainless steel and non stick?

lastly, do i have to dry them after I wash them all the time? or can i just let is air dry>

I don't understand what could be the sticky residue on your non stick pan since you've only used it once.
The fish should have been fried in the SS pan.
Cooking in SS can be tricky at first, believe me. The pan has to be hot, then the oil added, then the fish when the oil is hot enough. once the fish goes in, leave it the hell alone and if it doesn't want to turn, its not ready too. Just wait, it will release itself, its just like the grill that way.
Look up videos on deglazing and this will give you hints on how NOT to have to use a brillo pad every time you use the SS. Works like a charm
NEVER put a hot pan into water to soak, this will warp your new pans. Doing the deglaze will also prevent you from having to do that.
Try a MR. Stain Eraser on that non-stick pan...outside only and see if that helps
