I grabbed cookie mix instead...?!

If the cookie mix is about 16 oz. use these ingredients:
Preheat your oven to 350*F
*1 egg plus 1 cup beater whites
*1 tablespoon baking powder
*8 oz. room temp unsalted butter
* 1/2 cup milk or cream
* salt (pinch)
* 1 teaspoon vanilla extract
* 1/2 cup applesauce if you have it (will give your cupcakes a great texture and flavor)
Mix wet ingredients in a large bowl. Mix cookie mix with baking powder. Add wet to dry.
Cook for approx. 20 minutes. Check with a toothpick method in center.
They should turn out great.

You can but they will not turn out very well.
