You don't really need another veggie. You have stuffed mushrooms and a salad. Sounds like you need a starch, like a rice dish, mashed or baked potato, sweet potato, au gratin potatoes, polenta, etc.
If I was making this I would have creamy horseradish mashed potatoes, which is pretty much just adding horseradish to a basic mashed potato recipe. I would do this to play off the Prime Rib... or you can do a baked potato and make a sourcream horseradish sauce... and I guess you can consider a potato another veggie, if you want.
OR, if you want something less in carbs, you can do mashed califlower. I've had it, and it's actually not bad as a substitute to potatoes.
My last suggestion would be creamed spinach, which is a pretty classic side dish for prime rib.
I agree with the asparagus and garlic. Saute the asparagus quickly with a little bit of butter and garlic. Don't over cook them..it ruins the texture of the veg and can destroy the entire meal. It's asparagus not spinach. Or you could go with a veg salad. Bright red peppers, yellow peppers, onions, and slightly pickled in red wine vinegar. Not too much, just use it as a palatte cleanser. I know people are on the health thing but pancetta and butter wouldn't hurt in your arugula salad.

Prime rib always tastes great with gently steamed broccoli, still a little crunchy, with a cheese topping or the traditional Sauce Hollandaise.
Baked Potato.- Irish Potato or Sweet Potato. add Butter sour cream ( Options )
I would add some thinly sliced cucumber and red bell pepper to my salad.
A starch would make it complete, unless you are on a low carb diet. How about a twice baked potato.
