Question: Does olive oil loose it`s healthy benefits?
is it true that if I heat olive oil during the cooking process(eg frying a steak), that it looses most of it's uniquely nutritious qualities.

I have been cooking for eleven years now, plus culinary school at Le Cordon Bleu. Olive oil is mainly used for its flavor, when used for cooking and has a low smoke point (cannot use too much heat). Cooking a steak on medium heat should not dull the nutritious value as long as it's not smoking from the pan. Using it on your skin will make your skin healthier...



Yes, passed a certain temp it will lose its health benefits and actually become one of the more harmful cooking oils to use, due to its low smoking point. Once it starts to smoke, it has been said to create carcinogens, which are said to be a main cause of cancer... so yeah, kind of the opposite of "healthy". Plus, it will taste sour or bad when it gets to this point.

Olive oil should be used as a finishing oil, salad dressing, or marinade... NEVER to fry anything. You can saute up to around medium heat on most stoves, but I don't know how high it can go before it changes its chemical compounds off hand, so its best to use a canola oil.
