Simple Chocolate Cake

INGREDIENTS:
? 4 (1 oz.) squares unsweetened chocolate
? 1/2 cup butter
? 1 cup water
? 2 cups flour
? 2 cups sugar
? pinch of salt
? 1/2 cup buttermilk
? 1-1/4 tsp. baking soda
? 2 eggs, beaten
? 1 tsp. vanilla
? 2 (1 oz.) squares unsweetened chocolate
? 1/4 cup butter
? 1/2 cup milk
? 4 cups powdered sugar
? 2 tsp. vanilla
PREPARATION:
Preheat oven to 350 degrees. In a large saucepan, melt 4 squares chocolate and 1/2 cup butter in the hot water and bring to a boil. Remove from heat and add flour, sugar and salt. Mix well with a wire whisk or eggbeater.
Then stir in buttermilk, baking soda, eggs and vanilla and beat until smooth. Pour into 13x9" pan and bake at 350 degrees for 25-30 minutes, until the top springs back when touched with a fingertip.
While the cake is baking, make the frosting. In a heavy saucepan, melt 2 squares chocolate and 1/4 cup butter together. Add powdered sugar, milk, and 2 tsp. vanilla and beat well. You may need to add more milk or powdered sugar to reach the desired consistency: the frosting should be pourable. W
hen the cake comes out of the oven, let cool for 15 minutes, then pour the frosting over. Spread if necessary, and let the cake cool. 16 servings

Microwave Chocolate Cake

Beat 3 eggs until light and fluffy.
Soften 200g of Butter at 100% power for 2 minutes. Add this into the beaten eggs.Add in 3/4 tsp of vanilla essence as well.
Add 200g of Sugar to the above mixture and blend them in well.
Mix 30 g of Cocoa powder with 200g flour and fold this gradually into the egg mixture.
Add 1 tbsp of orange juice. You could also add milk instead.
Line a microwave safe dish with brown paper and grease and flour them well. Pour in the cake batter and microwave at 100% power for 5 minutes.Let it remain for a further 5 minutes and then check if it is cooked.

Microwave Molten Chocolate Cake

Ingredients
? 1 coffee mug
? 4 Tbsp. cake flour
? 4 Tbsp. sugar
? 2 Tbsp. cocoa
? 1 egg
? baking powder
? 3 Tbsp. milk
? 3 Tbsp. oil
? Small splash of vanilla
? 3 Tbsp. chocolate chips, optional
? 1 teaspoon peanut butter, optional

1. Add dry ingredients to mug, mix well with a fork.
2. Add egg, mix thoroughly.
3. Pour in milk, oil and vanilla, mix well.
4. Add chocolate chips if desired. Push a dollop of peanut butter into the center of the batter if desired.
5. Put mug into microwave and cook for two minutes on 1000 watts. Cake will rise over top of mug. Allow to cool for 2 minutes.

This Chocolate Mousse Cake Recipe serves 12


175g Butter

175g Caster Sugar

4 Eggs , Lightly Beaten

200g Self- Raising Flour

1 Tbsp Cocoa Powder

50g Dark, Orange flavored Chocolate, Melted

For the Orange Mousse

2 Eggs Separated

4 Tbsp Caster Sugar

200ml Freshly Squeezed Orange Juice

2 Tsp Gelatine

3 Tbsp Water

300ml Double Cream

Peeled Oranges, Sliced to decorate



Grease a 20cm / 8 inch spring-form cake pan and line the base.

Beat the butter and sugar in a bowl until light and fluffy.

Gradually add the eggs, beating well after each addition.

Sieve the flour and the cocoa powder, fold into the cake mixture.

Fold in the chocolate.

Pour into the prepared pan and level the top.

Bake in a preheated oven (180C/350F/Gas Mark 4) for 40 minutes or until springy to the touch.

Leave to cool for 5 minutes in the tin, then turn out and leave to cool completely on a wire rack.

Cut the cold cake in to two layers.

To make the orange mousse, beat the egg yolks and sugar until light, then whisk in the orange juice.

Sprinkle the gelatine over the water in a small bowl and allow to go spongy.

Then place over a pan of hot water and stir until dissolved.

Stir into the mousse.

Whip the cream until holding its shape, reserve a little for decoration and fold the rest into the mousse.

Whisk the egg whites until standing in soft peaks, then fold in.

Leave in a cool place until starting to set, stirring occasionally.

Place half of the cake in the tin. Pour in the mousse and press the second cake layer on top.

Chill until set.

Transfer to a dish , pipe cream rosettes on the top and arrange orange slices in the center.
