Substitute for Sun-Dried Tomato and Goat Cheese?!

Question: Substitute for Sun-Dried Tomato and Goat Cheese?
I am making a Cordon Bleu Recipe, trying for some simple substitutes.

The recipe calls for Chicken Breast, Sun-dried Tomato Goat Cheese (softened), Fire-roasted red pepper, Bacon. I don’t have the time to make sundried tomatoes and I am not planning to buy goat cheese right now.

Honestly, I have never actually had goat cheese and read that it has a distinct smooth texture and tangy taste, as well as the reduced fat content. ~I will use it the next time I cook this perhaps

Lemon and Mozzarella Cheese for Goat Cheese
No clue for Sun-Dried Tomatoes

I am worried the acid from the lemon will breakdown the cheese or leave a strong unwanted flavor. Is this likely or would it maybe loosen up the mozzarella? I could perhaps use mustard or a combination, maybe use baking soda to kill the acidity but keep the twang. The bacon will most likely mask the strong lemon flavor. Is this possible or is there any way to accomplish this?

I am not looking for a completely different recipe, just a few options to try.

Hope you guys can help!

Answers:

You can buy sundried tomatoes packed in oil. Simply drain them, dice them and mix them in some Philadelphia cream cheese instead of the goat cheese. Option 2, buy some flavoured boursin cheese.

Buy the sun dried tomatoes.

As fars as the cheese you could do many things. Try feta, cream chesse etc.. but youor recipe is not for chicken cordon blue. Chixken cordn blue is ham, swiss and chicken.

Sounds like you're making a ramped up Cordon Bleu

You could substitute Kalamata olives for the sun-dried tomatoes and Feta for the goat cheese

I don't know WHAT you're making but your imagination is as good as the person who wrote this recipe. Use whatever you want.
