I'm the same way, I think of food and recipes in my sleep. Mostly when baking or entertaining. I have a small home based dessert catering company. Small events and parties mostly. Before planning an event spread I'm up all night and day thinking of the different recipes I'll try what to do differently than last time and so on and so on.

When I'm not in the kitchen, I'm on the internet reading recipes scanning all my cookbooks (I have a huge collection) and food network is ALWAYS on the TV in our house.

No they are professional like every one else. They switch off the mind from food just when they leave the kitchen and switch it on once they are in. With practice they can remember all the recipes they keep doing every day or they refer the cook book just in case they forget but most of the time they think ordinarily and not about cooking

*Anything* one is interested in will take up a lot of thinking time (even when doing other things), including cooking. And if part of that interest is in creating, then it multiplies in that direction.

So I wouldn't say "every second," but would say certainly "a lot of the time" (...and bedtime, sleep, shower time, driving time, walking time, bus-time, etc are all extra-ripe times for that kind of thinking where creativity and analysis happen, and ideas get jostled around for new insights).

It really depends if he's cookin for what's in the menu or he's just doing something on the spot at home.
