chicken and rice help?!


Question: Chicken and rice help?
Ok Im trying to plan a flavorful dinner ahead of time and im very busy today so i have no time to run to store for anything extra....
I have large cans of chunk chicken breast..........
Plenty of Rice.............
Onions...............
Chicken Stock...........
What im wanting to do tonight is prepare yellow rice with chicken......
i have never made it before but ive heard its easy.......I have no idea what you put in the rice to make yellow rice....
I need some help yall!!

Here is a recipe I found. I'm sure you can sub ingredients or leave out anything you may not have


Yellow Rice
Ingredients

* 3/4 teaspoon ground turmeric
* 1/4 teaspoon ground cumin
* Pinch cinnamon
* 3 cups water
* 1 tablespoon unsalted butter
* 1/2 teaspoon salt
* 1 1/2 cups long grain or basmati rice
* 2 tablespoons sliced scallions-or onion

Directions

In a medium saucepan, heat the turmeric, cumin, and cinnamon over low heat until fragrant, stirring, about 30 seconds. Add the water, salt, and butter and bring to a boil. Add the rice and stir well. Cover and reduce heat to a bare simmer. Cook, covered, without stirring until the water is absorbed and the rice is tender, about 20 minutes.

Remove from the heat and let sit, covered, without stirring, for 10 minutes. Fluff with a fork, add scallions, and serve.



Chicken & Yellow Rice
* 1 medium onion, coarsely chopped
* 1 medium green bell pepper, coarsely chopped
* 1 (8 ounce) can water chestnuts, drained and chopped
* 2 tablespoons olive oil
* 1 whole chicken
* salt and pepper to taste
* seasoning salt to taste
* 1 (10 ounce) package yellow rice
* 1 (4 ounce) jar diced pimentos, drained

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a Dutch oven, toss the onion, green bell pepper, and water chestnuts with olive oil to coat. Rub the chicken with salt, pepper, and seasoning salt, and place on top of the vegetables in the Dutch oven.
3. Cover, and cook the chicken 1 hour and 15 minutes in the preheated oven, or to an internal temperature of 180 degrees F (85 degrees C). Remove from heat. Leaving the vegetables in the Dutch oven, remove the cooked chicken, cool, skin, debone, and shred meat.
4. While the chicken is cooking, prepare the yellow rice according to package directions.
5. Mix the shredded chicken and cooked rice into the Dutch oven with the vegetables. Return to the 350 degrees F (175 degrees C) oven, and continue cooking 15 minutes before serving.

A couple of ways to turn your chicken yellow is by adding tumeric or saffron to your rice as it's cooking.



1 turn on oven to 350
2 throw ingredients together in pan mix
3 cook for 3 hours
presto you have a yummy meal
