Sausage comes in all shapes and sizes. In my case, most recently with pork sausage links for breakfast this morning, about 1/2" in diameter and 4" long, in a frying pan on medium to high heat, hot enough to sizzle at least, 2 or 3 minutes on one side and flip for 2 or 3 minutes on the other side. I sometimes buy a pound or two of ground sausage and make patties about 4" in diameter and 1/2" thick. Again 2 or 3 minutes per side. When you cut through the sausage, you should see a constant color throughout, NO pink at all. Bigger links, like hot dog size or larger, take longer of course, about double the time per side. I love sausage, which is why I rarely have it so I will never get tired of the fabulous taste and ALWAYS appreciate what I have. I always save the fat to use when I make eggs over easy or when I fry up some hash browns.



Pork sausage should be cooked to an internal temperature of about 155 degrees. Beef sausage should go to about 150-155 degrees. If it has poultry in it (chicken or turkey) it should be a minimum internal temp of 165 degrees.
Ground meat always needs to be cooked longer.



On the grill I would say about 8-12 minutes. On the stove, I would say about 6-10 minutes, turning only once to brown both sides. You can also cook in the microwave but I do NOT suggest this because you will lose the "smoked" flavor of the sausage.

it also varies by cooking type: boiled won't take as long as grilled, but it won't taste as good.



best thing to do is boil them first and then tray freeze them in the freezer - take them out as you need them for a quick turn on the grill! I've heard thats what the sausage vendors do
