Substitute Margarine For Butter?!
One of my close friends is lactose intolerant, meaning he cannot use milk products. Read any cake recipe or the like and it will say add 'x' amount of butter. What I'd like to know is can I substitute cooking margarine for butter in recipes such as puff pastry.
I'm supposing that the reason butter is always given in recipes is that it gives a better taste, but maybe that's a mistaken impression on my behalf. Anyway is there a general rule I can use which would let me decide if a substitution would be acceptable.
I'd also appreciate some links to sites if you have them.

Yes you can use margarine in place of butter.
You can also use applesauce, pumpkin puree, mashed bananas in place of butter or oil in some recipes. Usually a quick bread or cake. (Quick bread is like Banana Bread, Pumpkin Bread Zucchini Bread.)
Do not use applesauce or the others listed for cookies.
Puff pastry might be a little difficult as it needs the layers of fat to make the layers puff. Margarine has more water, watch the labels make sure the margarine you are using states it is good for baking. If the margarine has little water the puff pastry might work.
There is a flavoring that will give products a buttery flavor. Look where Vanilla is sold and you may find Butter Flavoring.
Rather than Puff pastry look for Filo Pastry Sheets in the freezer section of the store. Use the Filo in place of Puff Pastry. Will work for some recipes not all.
Nikki P is right on the money. I, too, substitute applesauce for the butter or for the oil in bread and cake recipes. (Way less fat---healthier.) I have substituted margarine for butter in my shortbread cookie recipe with success.
As previously stated, use stick margarine, not tub; check the water content/ratio; and check whether it is milk based or soy based.
Lactose intolerant doesn't mean a person can't consume butter in baked goods. Maybe they have a milk allergy? You'd have to check.
I've had good luck baking with margarine. If you want the product to taste really good, use lard. It's bad for your health, but produces a superior product.
You CAN substitute margarine for butter. Depending on what you're making, it might not even disturb the flavor. It depends on how much butter the recipe calls for but I have substituted before and the end product came out just as delicious.

Margarine is an acceptable substitute for butter.
It will make some cookies go flatter than if you used butter, but it's mostly a flavour thing.
Butter does not contain milk.
Substitute a quality sunflower / olive oil / vegetable oil spread instead.
Margarine is garbage...and barely fit for human consumption.
Have you asked him if he can have butter? I am also lactose intolerant but butter does not bother me at all. If you do have to substitute I would recommend shortening instead of margarine.
yes you can just make sure you use the hard margarine - not the soft stuff in the tubs

In particular, thinking of your friend, many margarines contain a certain amount of butter, so you must be careful to shop for a margarine with a soya base, to make sure that there is no butter inside. I have had to do this for many years for one of my sons and we have all got used to the taste of soya margarine. It doesn't taste as good as butter, but it has the great advantage of enabling you to cook for your friend and other lactose intolerant people, who find it hard to buy suitable baked products and rely on home baking.
i don't think it's possible to make puff pastry without butter, it wouldn't rise properly or anything like that
i do have no butter no milk recipes for carott cake, marble cake, chocolate and almond cake, lemon and almond cake, and gingerbread if you need them feel free to send an email ;)
ive heard (and used) that as a general rule that creamed butter (with sugar) can be replaced by almond purée in cakes , you replace the butter with same weight white almond purée and a bit less sugar
if it's melted butter you need, do half almond purée and half soy milk for instance, or oil

I do a lot of baking, pastries as well as cakes. I never use butter mainly because it's so expensive. The best margarine on the market for baking is Stork. Get the 1Kg tub as it's cheaper than 2 - 3 little ones.
I wish you luck with your baking and get to enjoy it as much as I do. Tesco's own brand of soft marge is good too, as is their lard for pastry making.

Your friend can probably eat things you bake with butter in them. I'm lactose intolerant and I do fine with that type of thing. In some things you can substitute margarine but it's oil based so it doesn't work in some recipes. Try looking up recipes online that use margarine.
