Make sure oven is HOT! and don't crowd them on the pan. Put them on parchment paper, it helps crisp the bottom, even if you flip them over it helps a lot. Drain them on paper towels when they come out for a minute.
Use your oven instead of microwave. Microwaves always make fish sticks soggy because the inside is cooked too quickly and the outside (breading) doesn't get much attention. Put your fish sticks in the oven for 12-15 minutes (or according to box directions) and they will turn out much, much better. You can also use a toaster oven if you have one and that's nice because you can watch them before they get too gold/brown for your liking.
Flour your fish, then dip it in an egg wash (egg and water mixed together) next coat it in bread crumbs. It shouldn't fall off. If you prefer a battered fish, this is a great batter recipe. Pour one package of instant yeast to the bottom of a bowl. Add enough warm water to just dissolve the yeast (about 1/3 cup). When it has bubbled up a bit, add one entire bottle of beer. Next beat in enough flour until it reaches a pancake like batter. Let it sit for about 20 minutes. Dip your fish in and fry in hot oil (350 to 380 degrees). It's just like fish you'd get in an english pub.
You can deep fry them
I buy the Gorton's Potato Chip crust filets and they are VERY crispy, and I just put them on a baking sheet and bake for the longest amount of time indicated on the box
I never put mine in the oven. You can pan fry them in oil.
maybe your oven is off...get a oven thermometer to see if it's temperature is actually what you set it at.
just follow the directions on the box.
