Is there a way to make spanish rice with tomato sauce?!


Question: Is there a way to make spanish rice with tomato sauce?
I want to make spanish rice and was wondering if I can use white rice and tomato sauce, and if so how should I do it?

Answers:

Yes. Fry 1 1/2 cups of uncooked rice in veggie or canola oil... usually 2-3 tbsp on a medium-high heat for 2-3 minutes.

Add about 1/2 a cup of tomato sauce (I don't use sauce from a jar, I just use a small 6-8 oz can or tomato sauce.... you know, those real tiny cans?), stir until all the rice is coated and continue to cook for another 1-2 mintues. Add 2 1/2 cups of chicken broth, bring to a boil on high heat, then immediately cover with a lid and reduce to a simmer for 16 minutes. If you wanted to, before you add the rice you can add 1/4 chopped onion and 1/2 a green bell pepper, 2 garlic cloves and 1 jalapeno for flavor before you add the rice. You would add all those to the pan before the rice, except the garlic... and saute for 8-10 minutes on medium heat. The garlic you can add when you add the rice.



Spanish Rice Original

INGREDIENTS:
1 cup chicken broth
1 cup tomato sauce
6 slices bacon
2 onions, diced
1 cup uncooked white rice
2 tomatoes, diced
2 green bell peppers, diced
1/2 teaspoon chili powder
1/2 teaspoon salt and pepper to taste
1 (10 ounce) can sliced black olives, drained (optional)
1 (10 ounce) can whole kernel corn, drained (optional)

DIRECTIONS:
In a small saucepan over medium heat, combine chicken broth and tomato sauce. Bring to a boil while cooking the following.

In a large skillet over medium heat, cook bacon until evenly brown. Chop bacon, and set aside, reserving the bacon fat. Add onion to skillet, and saute until tender. Stir in rice, and cook until lightly browned, 3 to 5 minutes. Pour in boiling chicken broth and tomato sauce. Add diced tomatoes, green peppers, and chopped bacon. Season with chili powder, salt, and pepper. Cover, and simmer for 30 to 40 minutes. Stir in black olives and corn.
