Question: Cooking merguez in a pan: how to tell when ready/ or approx. cooking time?
Also what heat to cook at: medium, or medium high? Please incl. details such as with lid on or without.

Answers:

If it is raw, I would cut it into 3 inch portions, lay in a pan, add about 1/2 inch water and bring to a boil. Cover and lower the heat to a simmer and cook 10 minutes or until the water is gone.
Turn up the heat and brown lightly on all sides.
This is the way I cook all sausages and they always turn out just fine.
