Question: Cake baking help needed! :)?
I am not much of a baker, so this is completely new to me.

I am baking a cake (betty crocker) to surprise my boyfriend after work on valentine's day weekend. I got a plain white cake with white icing just to be safe.. and im starting to regret it.
What was I thinking? sooo boring!

How and What could I add to this cake (batter) to make it funner and yummier!? Could I add fruit somehow?

here is what I would do:

get some raspberries and/or strawberries. Clean them, de-stem if you get strawberries, put them in a bowl and coat with sugar (you can even add a few tbsp of grand marnier if you want to truly mascerate them) Save a few aside for garnishing the top of the cake.

Then after a little while take some of the juice and add it to your cake batter.

Bake the cake in 2 rounds

put a thin layer of whipped cream on the bottom layer (once it is *completely* cool or it will run) and then layer on the raspberres/strawberries. Then top with a little more whipped cream, and then the second layer of cake.

Then frost. Granish with remaining berries in a pretty pattern, or slice a single strawberry and put it in the center with a mint sprig or something.

It'll be like a strawberry shortcake cake.



You could add canned fruit like fruit cocktail, crushed pineapple, etc to the batter. Drain the juice off the fruit (save it for use as part of the liquid called for in the directions) making sure the fruit is well drained. Then mix the cake batter per instructions and just before pouring the cake into a pan, stir in the fruit. This will make the cake somewhat heavy and moist.
You can always use a drop or so of food coloring to the frosting if you don't want it white.



heres a few things ive tried over the years successfully

jam and cream filling, top dusted with icing sugar / butter frosting

Marmalade filling with added lemon oil and a lemon icing

Mint chocolate icing. on a plain or chocolate sponge base ( mint extract and chocolate in the batter)

chocolate mint fondant pieces mixed into green butter icing

pink strawberry buttercream icing

yellow lemon buttercream/ lemon chocolate icing with lemon extract added to the batter

You could get some coloured tube icing and decorate it or use candy shapes/sprinkles - there are loads available : )



Melted Ice Cream Cake......this is one of my favorites...

Take a box of white cake mix and add two cups of melted ice cream (NOT two cups of ice cream, melted; melt it first, then measure) and 3 eggs. Mix for 3 minutes on medium speed of whatever mixer you have. Pour into a greased 9X13 pan and bake for 35 minutes at 350 degrees. Ice however you like.

This is my in-a-pinch cake. You can use any type of ice cream. I used a peanut butter ice cream that had peanut butter cup pieces in it and the cake was terrific. You can make it in rounds..I just happen to use 1 pan...

You could make it into 2 layers and put strawberries and whipped cream in between the layers. Or you could put some chocolate chips in the batter.



dried/dehyrdated fruit yes eg dried apricot, raisins etc. fresh no, as it would make the batter too moist i think?

you could maybe use jam as a filling like they do in victoria sponges?



ohh i think u shud go with the first idea and maybe u can buy frosting in a tube & write something on the cake or draw somthing lol
