Question: How to thicken a sauce? It's technically a soup that's too thin...?
but I want to make a Chipotle Sauce out of it for some grilled chicken.

Should I use flour, or would it ruin the taste? Ideas?

mix corn starch with water. it's called a "slurry". it will thicken it without making it gritty. definitely check your salt after adding it though. slurries tend to dilute the flavor.



First, reduce, (boil down), the liquid to concentrate the flavors. This also will help to thicken. Then use a cornstarch/water slurry to finish thickening. Arrowroot works well too. You can also shred some potato into the liquid. The potato will disintegrate and turn into a starch that will thicken your liquid. The flour water slurry will work as well, but don't use hot liquid to make the slurry, you will be sorry. For this sauce, the flour method would be the least desirable. Good Luck



Using Flour or Cornstarch to Thicken Soup...............

Put two tablespoons of flour or cornstarch into a small mixing bowl.

Add just enough warm water to dissolve the flour or cornstarch. Use a fork or small whisk to mix the flour or cornstarch with the water until you have a runny paste....

Pour a cup of warm water into the bowl and mix....

Incorporate the flour/cornstarch water into the soup and let simmer on low to medium heat until thickened. If the soup doesn't thicken up enough, simply repeat steps until the soup is thick enough.

Taste to make sure the seasoning doesn't need adjusting...

add some flour but dont add it until its boiling because alil flour goes along way.....add little pinches at a time and mix regularly to prevent ti from thickening too much. once it thickens theres no way of going back. and dont worry it wont affect the taste if you want to desguise the taste add some evaporated milk just alil. it will add alil flavor and you wont taste the flour at all.



Take about a tablespoon of corn starch, and mix it in a small cup containing about a cup of COLD water. (The water must be cold or else it will lump up in the soup) Whisk it well so that there are no lumps. Then, add very small amounts to your soup a little at a time and wait a couple minutes between adding more until you get it to the consistency you like.



Mixing arrowroot and water until it's about the consistency of warm donut glaze, then adding it to the dish, will thicken it nicely and won't affect the flavor.



You can use flour. Make into a runny paste using some of the liquid. Slowly at to the sauce until as thick as you desire.
