Question: Alton Brown's chocolate chip cookie recipe- can I simply add cocoa powder and make it double chocolate chip?
I've been making chocolate chip cookies with Alton Brown's "the puffy" recipe for a long time, which is:

1 cup butter-flavored shortening
3/4 cup sugar
1 cup brown sugar
2 1/4 cups cake flour
1 teaspoon kosher salt
1 1/2 teaspoons baking powder
2 eggs
1 1/2 teaspoons vanilla extract
2 cups semisweet chocolate chips


I want to try making double chocolate chip cookies for the first time, and was wondering if I can simply add cocoa powder to that recipe or will that mess up everything?? :(

It should be fine, but be sure to swap out the amount of cocoa you use for flour. For instance if you use 1/2 cup cocoa powder, reduce the amount of flour you use by 1/2 cup.



If you want to make double chocolate chip cookies, then find a recipe just for that. When you change a recipe, it just messes up the consistency, especially when adding dry ingredients. Usually, but not always, you have to adjust the liquid measurements when adding dry stuff, and you would need to experiment with it, which could waste money if it doesn't turn out well.
