if you want to add some alcohol to it, white wine is the obvious choice!! -- it complements the ingredients beautifully ;))

Here's a super easy seafood sauce and it's delicious. Add about 4 tbsps of olive to the bottom of your pan with one clove of chopped garlic and one chopped shallot. Cook over a medium low heat until golden brown. In the meantime, get a can of whole tomatoes and puree them in your blender. I prefer to use whole tomatoes and grind them myself versus buying already crushed tomatoes. They tend to be sweeter and not make the sauce acidic. Now back to your garlic, once it has turned golden, shake in some dried hot red pepper flakes (this does not make your sauce taste peppery, it simply adds that heat or spiciness you're looking for and works really well in sauces). Next add a splash of very dry white wine and let it simmer for about a minute so the alcohol burns off. I usually go by smell. When you first add your wine it'll have a strong alcoholic scent and it fades as the alcohol cooks off. Then add your already pureed tomatoes, salt and some pepper. Simmer over medium heat for about 15 minutes. Next add any seafood of your liking (ex. shrimp, calamari, clams, etc.). Fish cooks very quickly and this should only take 5 minutes at most. Toss in your already cooked pasta into your sauce, sprinkle with some chopped fresh parsley and buon apetito !
If you use a red sauce, the red pepper flakes are best to make something like a fra diavlo sauce.
With a cream sauce, I like something more subtle like a saffron cream sauce.
You can also make your red sauce pungent lie a puttanesca sauce with olives, anchovies, capers.
My favorite new-to-me spice is smoked paprika. It is a beautiful color, of course, and the taste has an earthiness to it that is delicious. I think it would be great with a seafood pasta. Happy Valentine's Day!
