Do you have any simple recipes?!

Question: Do you have any simple recipes?
I honestly dont know how to cook any meal that isnt packaged, so one of my goals is to learn while my husband is deployed. Im not picky, Im really interested in pasta dishes & chicken dishes. We both eat seafood, just really anything that would be ideal for a first time cook! Hes usually the cook so I want to suprise him with something good! Thank you :)

Roasted chicken:

Buy a whole roaster chicken at the store. If its frozen, thaw it out. if not, then yay! less work

take it home

Then prep everything you need to prepare it so you don't have to wash your hands a zillion times. Chicken is a major culprit of cross contamination. Anything that touches raw chicken you wash before it touches anything else.

So you take a lemon (or 2 if they are small) and an orange, slice them in half. Smash up a couple cloves of garlic with the flat side of the knife (put the clove on the counter, put the flat side of the knife and then hit it with the heel of your hand. this will peel the clove too)

wash up the bird, then pat it dry

put it in a roasting pan (you can either just use a glass baking dish or the kind with the insert, for a small bird it doesn't really matter)

Then sprinkle some salt and pepper inside, and maybe some other herbs like thyme or rosemary. If you have dried use those, if you want to buy fresh just throw the whole twig in, no need to chop or anything. Then shove in the lemon, orange, and garlic.

then you rub it up with either butter or olive oil, salt, pepper and whatever other seasonings you like.

put it in a pan, bake at 375 for about 20 minutes per pound, or until a meat thermometer reads 165 in the leg (which is dark meat so it takes the longest to cook) or until the juices run clear when cut (but cutting it too early can make your bird dry.)

serve it with mac and cheese or roasted potatoes (just either throw whole, washed potatoes in the oven, or dice them up and salt, pepper, oil and herb them in a pan, cook until a fork is easily inserted and removed. called "fork tender"

Mac and cheese recipe:

1lb medium sized noodles (I like rotini)

8oz of sharp cheddar (or 4 of 2 kinds of cheese, this is fun to mess around with! use a horseradish cheddar, or spicy jalapeno cheddar, or 1/2 cheddar and 1/2 smoked gouda is my favorite)

4tbsp butter
4tbsp flour

5-6 cups of milk

salt, pepper, nutmeg

In a sauce pan melt the butter and let it bubble for a few seconds, then add the flour a little at a time. you want it to be a paste, but not too dry. If it seems to dry, just add a little more putter. let the flour cook for a minute to get the raw taste out.

Add the milk a little at a time, whisking after each addition to make sure everything is incorporated. You are technically supposed to heat the milk separately (never boil milk unless a recipe calls for it, but as a rule of thumb just don't as it curdles the milk.) Let it simmer until it is thick.

Add your cheese and cook until melted completely. season with salt, pepper, and a pinch of nutmeg.

Meanwhile: Boil your noodles until almost done (just bite one and if its a little chewy it's good.) It will finish cooking in the oven.

Pour the noodles into a 13X9 pan (pam it if you wish) and then pour the sauce over the top. mix well, top with breadcrumbs and parm cheese. Bake in the same oven as the chicken for 30minutes.

It seems like a lot but the steps are actually pretty easy. I make the mac and cheese all the time with different variations. I'm just trying to explain it so it makes sense since I cook by feel most of the time.

As for veggies, you can roast carrots, squash, asparagus in the same oven as well. Just toss with a little olive oil and seasonings if you want.

or you can steam veggies on the stove top. If you don't have a double boiler, I just use a metal colander propped on a pot of water lol

Super simple: Cook a package of pasta according to its directions (usually boil a pot of water on high heat, add pasta, stir, lower to medium heat, and cook for about 10 min). Drain and stir with a jar of tomato sauce (pre-seasoned with basil and stuff). Add some chickpeas, a salad or frozen veg, maybe some olives, sundried tomatoes, and marinated artichoke hearts and you've got yourself a meal.

Do kabobs. They're easy get the sticks kabob and put them in a container with water that way the sticks won't burn. Get chicken, bell pepper(different colors so it will look nicer), pineapple and onion. Cut the chicken into small squares, Same with bell pepper, pineapple and onion. Get a stick out of the container and start putting a piece of onion. After that its your choice to either put bell pepper, chicken or pineapple. continue the until the stick is full. After put it into a a small grill put oil so it wont stick. When ready take them out and check that the chicken is well cooked.
After that put it in a container and put teriyaki sauce and enjoy. A rice will a good combination.

Im 17 so lets see if you like it. Good Luck and Enjoy!

Buy a good basic cook book like Betty Crocker. Then browse the recipes for ones that appeal to you and then simply follow the dirctions. Cooking isn't rocket science, and in a cook book like Betty C, the instructions are clear. Don't start with Joy of Cooking or Julia Child's French Chef.
If cooking is really intimidating to you take a cooking class.
