Why do my cakes tear apart?!


Question: Why do my cakes tear apart?
My cakes always come out tasty, but no strongly held togather. I follow the recipe exactly. I'm trying to learn to decorate professional looking cakes to make for friends and family's b-days or events, but the cakes tear apart. Should I just add an extra egg?

CAKE FALLING APART

- too much baking powder/baking soda, sugar, or fat

- improper mixing

- oven temperature too low

Cracks & crumbles:

Too much shortening, baking powder, or sugar.

Taken the cake from the pan before it had cooled enough.

The layers may have needed a little extra baking time

Are you using the same recipe? If so, it might be flawed. Too much flour, not enough fat can make a cake break. Everything should be super fresh including baking powder/soda. Extra eggs might help, but I think there are other issues here.
