what should i make for dinner?!


Question: What should i make for dinner?
ive got cod fillets and i kinda fancy having them, so i was wandering if you could help me think up how to cook them. im tired of plain boring so i want something exiting but not too difficult. here is what i have. ripe tomatoes garlic, shallots, spinach, pasta, mozarella (the fresh mozzarella that comes in a ball with liquid) i also have rice, and i love spices so i have plenty of those.
i fancy something warm, maybe a bit creamy... and if you can think of something nice that requires a few more ingredients, feel free, as i have the shop round the corner so i can go and buy it. nothing too fancy as it isnt a mega store. its just a little co-op shop.

I love cod also. Here's a simple marinate that's perfect with any vegetables you want to include:
Lemon Butter Sauce:
* 1/3 cup fresh lemon juice
* 2 Tbsp. white wine vinegar
* 2 Tbsp. butter
* 1/2 tsp. kosher salt
You can wrap your cod along with all those veggies you mentioned and top with cheese 2 minutes prior to serving. Serve it with a delicious "Alfredo Sauce Pasta" dish.
Alfredo Sauce: In a saucepan, heat 1/2 stick of unsalted butter, add heavy cream, a dash of nutmeg, a dash of cayenne pepper, sprinkle garlic powder and salt to taste. Heat on low for a few minutes and then add plenty of Parmesano/Regiano mix cheese (grated), you can find it in any stores. Sometimes if I don't have that, I just add mozzarella, why not!! It's a little gooey but I love that too. Keep mixing until smooth. It that's simple. Serve over your pasta.

This is a delicious alternative way to cook your cod:
Cod Fish Cakes Recipe
Ingredients
1 lb of cod fillets
2 medium-sized russet potatoes
1 cup bread crumbs
1/4 cup chopped fresh parsley
2 Tbsp freshly grated Parmesan cheese
2 garlic cloves, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
2 eggs, lightly beaten
Oil such as canola oil, for frying
Method
1 Boil and mash the potatoes, set them aside.
2 Boil the codfish until it flakes easily. Drain and flake the fish with a fork. Be sure to remove all bones.
3 Mix the flaked fish, the potatoes and the rest of the ingredients together well by hand. If the mixture is too crumbly, add another egg. If too sticky, add some more bread crumbs.
4 Form the mixture into cakes and fry them on medium high heat in a skillet coated with oil.
Makes 12 fish cakes. Serves 4-6.
