Calling all bakers, I need a simple Oatmeal Muffin recipe?!


Question: Calling all bakers, I need a simple Oatmeal Muffin recipe?
I have been using the Quaker Oatmeal muffin mix, but decided to try and make my own. I followed a recipe from the Quaker site, but they were pretty bland. Anyone out there have a great recipe they would like to share? Is there a 'secret' to tasty muffins?
Hopefully a simple one, as I am not a very experienced baker lol!

You've got to try this recipe, it's simple and simply delicious!

Muffins Mix Ingredients
* 1 1/2 cups Flour
* 1 cup oats
* 1/2 cup Sugar
* 1 tablespoon baking powder
* 1 cup whole milk
* 1/4 cup vegetable oil
* 1 egg, lightly beaten
* 1 teaspoon vanilla extract
* 1 teaspoon ground cinnamon
* couple shakes of salt (to bring the sweet flavor out!)
** A hint of nutmeg
Ingredients for topping Muffins:
Topping
* 1/3 cup Oats
* 1/4 cup Flour
* 1/4 cup packed Brown Sugar
* 3 Tbsp cold butter
Directions:
Make the topping by mixing ingredients with a fork in a large bowl and set aside for now.
In a separate large bowl. Mix in your blender, by pulsing a few times (remember to get the texture you want by pulsing, not grinding).
In a separate bowl, mix wet ingredients. Add wet ingredients to dry mix by making a "well" in the center and begin mixing it till it's smooth.
Fill your muffin tin or paper wraps, about 1/2 to 3/4ths way up, leaving room for ToPPing.
sprinkle with the sugar topping by patting gently on top of your wet mix.
Bake at 400*F for approx. 15-20 minutes. Yields for about 12 muffins.
It's simple and inexpensive....plus super moist and delicious!
You'll never make them any other way, guaranteed.

This will probably take approximately an hour and a half. I hope that is simple enough! :l
Ingredients:
1 cup milk
1 cup quick cooking oats
1 egg
1/4 cup vegetable oil
1 cup all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
Directions

Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
In a small bowl, combine milk and oats; let soak for 15 minutes.
In a separate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. Stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are 2/3 full.
Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
