Add a little oil to the water, when cooking.



First, make sure you're using enough water, and bring it to a good rolling boil. If you add the pasta, and the water stops boiling for longer than a few seconds, then you don't have enough water. Also, stir the pasta while it's cooking to completely dissolve any starch clinging to the surface--that undissolved starch clings to itself and acts like glue.

If you're using enough water, and the water is hot enough, then a stir now and then is all you need.

The key is to use a HUGE pot of rapidly boiling water. If the pasta has a lot of water to move around it then they won't stick together.

The water also needs to really be boiling. A hard boil. Sort of boiling doesn't cut it for pasta.

Stir the pasta when you first put it into the water and then stir again every minute.

I don't like adding oil to the water.



Bring the water ot the boil. Add a handful of salt and the tortellini, then give the lot a big stir with a wooden spoon (a wooden spoon won't transfer heat).

I'm not a fan of adding oil to the water because it can create an oil slick on your pasta which can prevent the sauce from sticking.

To keep pasta from sticking together, you must salt the water and don't put the pasta in until the water is fully boiling and make sure you stir it until the water comes to boiling again after adding the pasta. Then it will not stick together! Bon appetit!

If you use enough water, add the pasta when the water is boiling, stir the pasta frequently and don’t wander off (‘Gli spaghetti amano la compagnia’, or ‘spaghetti loves company’) and don’t overcook it, adding olive oil to the water to stop it sticking is totally unnecessary.
