Easy home-made recipes?!

Question: Easy home-made recipes?
We've had nearly nothing to eat at home for quite a while now and whenever we come home from the grocery store, we don't tend to come home with a lot that can be a good meal. I won't say anything about my family's cooking *cough* not that good *cough* but are there some simple things I can make that are satisfying too? Ingredients and directions are appreciated. I enjoy Italian, Chinese, Afghan, and anything that just isn't really mushy. No raising please and nothing like macaroni that everyone already knows how to make. Stuff that doesn't take hours to make. And I can't eat anything with pig in it.

If you like Italian, try Chicken Cacciatore (sorry about the spelling but it should be close).

Cut a whole chicken into 8 pieces (or but a cut-up fryer)
2 onions (sliced)
garlic cloves (minced 2)
Large can of tomatoes
mushrooms
Oil
Italian Herbs

Brown chicken in large stock pot in oil. Remove and drain.
Saute onions and garlic until tender.
Return chicken to pot and add remaining ingredients.
Let simmer until tender and chicken is done (about 1 hour)

Make a simple mince stew and mashed potatoes.
Casseroles & Stews:- Savoury Mince
2 tablespoons olive oil
1 brown onion, finely chopped
2 garlic cloves, crushed
600g beef mince
1 large carrot, peeled, finely chopped
2 tablespoons tomato paste
3 x 400g cans crushed tomatoes
Heat oil in a large saucepan over medium heat. Add onion and garlic. Cook, stirring occasionally, for 5 minutes or until onion is soft. Add mince. Cook, stirring with a wooden spoon to break up mince, for 15 minutes or until browned.
Add carrot. Cook, stirring, for 5 minutes. Add tomato paste. Cook, stirring, for 2 to 4 minutes. Add crushed tomatoes. Increase heat to high. Bring to the boil.
Reduce heat to medium-low. Simmer, uncovered, for 20 to 30 minutes or until sauce thickens. Season with salt and pepper.

Serve with mashed potatoes.
