The lunch they serve at home are gross and so unhealthy. What are some healthy alternatives?

Pizza Roll-Up

Ingredients

* 1 8-inch whole-wheat flour tortilla
* 2 tablespoons prepared pizza sauce
* 12 leaves baby spinach
* 3 tablespoons shredded part-skim mozzarella


Preparation

1. Place tortilla on a plate and spread pizza sauce over it. Top with an even layer of spinach and sprinkle cheese on top. Microwave on High until the cheese is just melted, about 45 seconds. Carefully roll the tortilla up. Let cool for 10 minutes before slicing into pieces, if desired.

Tips & Notes

* Make Ahead Tip: Cover and refrigerate the pizza roll-up for up to 1 day.

Ingredients

* 1/2 cup shredded cooked chicken
* 1/4 cup shredded carrots
* 2 tablespoons barbecue sauce
* 2 teaspoons light ranch dressing
* 1 small whole-wheat sandwich bun
* 1 leaf romaine lettuce

Preparation

1. Combine chicken, carrots and barbecue sauce in a bowl. Spread ranch dressing on the bun. Top with the chicken mixture and lettuce.

Frittata. Sausage.
1/2 pounds Italian sausage
2 cups minced onions, I just chop mine
2 cups Yukon Gold potatoes, cooked and sliced about 1/8 inch thin
2 green peppers, sliced thin
2 red peppers, sliced thin
1/4 cup shredded Fontina cheese
12 large eggs
1/2 teaspoon salt & 1/4 teaspoon pepper
Preheat broiler
Cook sausage in large skillet over medium heat until brown, about 10-15 minutes. Set aside. Cool and cut into bite size slices. Pour off any excess fat, leaving about 1 tablespoon in skillet. Add peppers and sauté for 5 minutes. Add the onions and sauté about 3 minutes with the peppers. Add the potatoes and continue to sauté them until lightly brown, about 10 minutes.
In bowl, beat eggs and season with salt & pepper. Put sausage back into skillet and pour eggs over mixture and stir gently to combine.
Reduce heat to low, cover and cook until eggs are nearly set, about 5 minutes.
Remove cover, sprinkle with the shredded cheese, place skillet in broiler to lightly brown, 2 minutes or so, depending on your liking. Cut Frittata into wedges and serve.
This can be served cold or hot but I like it better hot. Also, if you don't want the sausage in it you can leave it out.

I eat a wrap almost every day for lunch..quick, delicious and nutritious

Whole grain tortilla...the bigger the better haha.


These are a few of my faves...

Hummus
Roasted red peppers
green peppers
onion
spinach

greek salad in a wrap

olives
pickles
green peppers
onions
tomatoes
spinach
sundried tomatoes

fill them with anything and roll it up =) idk if this is in the vegetarian/vegan section..but these are my fave vegan options

add turkey, ham, cheese, if you're an omnivore =)

i always have a wrap with a huge salad...i just put olive oil, red wine vinegar, salt and pepper on any greens...add nuts, apple or pear slices for little treasures in your salad



Soup and salad. A sandwich on wheat bread with fruit. Supplement a so-so lunch with healthy addons, like carrot and celery sticks, fresh fruit and water or 100% juice over soda.



A couple cup of coffee and a few ciggies always works for me when I'm sick of everything else
