Question: Italian spaghetti & chinese noodles ( whats the difference ) ?
when these are both cooked they have similar texture , similar appearance , and similar taste ??

are they the same ingredients ?

and are they made the same ??

how do they differ ??

The ingredients are not exactly the same. Pasta is made with semolina (course ground flour from semolina wheat) while chinese noodles are made from white wheat often spring wheat. Noodles sometimes has egg added to it.
Pasta is usually made in a pasta press (like an extruder) Noodles can be made the same way. At home both are usually hand cut.

Pasta is made from semolina and sometimes whole wheat flour.

Chinese noodles can be made of white flour (with egg), rice flour, sweet potato or buckwheat flour.

Pasta is boiled in water. Some Chinese noodles are boiled, while others are immersed into boiling water, removed from the heat source and rinsed with cold water when soft.
