How do you know when a salmon is cooked medium?!


Question: How do you know when a salmon is cooked medium?
I need to know the difference between a medium-rare, medium, medium-well and well-done salmon. How do you know from looking at the outside what the temp of the salmon is without breaking it open? I saute the fish first to get the top and bottom color, but then put it in the oven to finish cooking.

Take the tip of a knife and insert it into the thickest part of the fish. Pull out the knife and touch it to your lip if it is hot the fish is done. If it feels cool or just warm the fish needs a little more cook time.



You can't cook salmon to different temperatures, it's either done or it's not. The only fish I know that can be cooked that way is tuna.
