I want to try to make sushi but I don't want to cut and prepare the raw fish, and I don't want to end up making california rolls all the time. Is there a sushi roll that doesn't use raw fish, or is there a place that I can trust to go to buy clean and fresh raw fish?

We make Makizushi at home (sushi rolls) and you can use things like canned tuna, smoked salmon, cucumber and avocado.

Frozen ones are fine too, just thaw them in cold running water and put it on rice. frozen hamachi and tilapias are readily available (for me at least, in an asian market), and if you can find an asian supermarket people usually prepare everything for you, like cut off head + clean gut out + slice it in a filet so you can just cut up the fish sushi-size.

Also you can make shrimp and salmon (not cooked, those fall off too easily) like others have said.



A fishmonger will be able to slice it into strips for you or whatever cut you wish without much fuss. He'll just need some direction from you on how thin and long to make the strips. An authentic Japanese sushi filling within a nori roll with rice is strips of Japanese omelette. Here is the recipe:

2 eggs?
1 t soy sauce?
1 t mirin

Mix up ingredients and pour a thin layer in a heated frying pan, roll the omelette like a tight swiss roll across the pan. Add another layer and roll back the other way. Repeat. You'll end up with a flavoursome omelette roll that you can then slice into thin strips.

sushi is very dangerous to make at home unless you absolutely, positively know your fish is super fresh and of the utmost quality. that being said, you can make California rolls with cooked (smoked or otherwise) salmon, or make other rolls using fresh veggies, other types of cooked fish, shrimp, octopus or squid, eel, etc. I had cooked fish rolls once with barbecued halibut and OMG they were good. good luck!
