How many days after the 'Use By' date can I keep my ham?!

Question: How many days after the 'Use By' date can I keep my ham?
My honey roasted ham expired on February 1. Or, at least the 'Use By' date says February 1. I opened the new ham today and it was completely sealed and refrigerated before I opened it today. I ate one, and it taste fine. How much longer do you think I can keep it and eat it?

Answers:

Ham "keeps" for a long time due to the preserving...As long as it doesn't smell or feel slimy, use it. It also freezes very well, dice up what you won't use immediately and freeze for omelets, slice for sandwiches etc

as long as you JUST opened it, maybe 10 days. I certainly wouldn't eat it cold. we had a honey baed ham and ate it 2 weeks after opening it (and opened it 1 day before it "expired"). use by dates aren't always accurate. it's more like "best by" date.

Usually food is good for about a week or two past the expired date. Use your nose, as long as it smells fresh and no funkiness going on, it's probably safe to eat.
