Those cakes look like they were made by professionals. Your mom should be pleased by any cake you make for her birthday.
You might go to a WalMart or Target or a party supply store where they have cake pans in different shapes for special occasions. You can decorate with little candies or some of the pre-made decorations that are available in the cake mix aisle.
Another idea is to get an Angelfood cake already made and cream cheese frosting in a can and then add strawberries or some other fruit for decorations.
Try one of the large chain craft stores for the fondant, and i think they have the tools that you will need to work with fondant too. Good luck!
