shiitake mushrooms? ....?!


Question: Shiitake mushrooms? ....?
I am home alone and basically want some simple mushroom lunch!

i have a several shiitake mushrooms (they are the big brown ones). I read this really simple dish about stuffing them.

basically, u bake them (cz i dnt have a grill). u boil potato mash it up with cilantro, salt and pepper
so u stuff the potato on the mushroom nd voila...

bt i dnt kno how to bake the mushrooms - do u just put oil on baking sheet nd bake them or do u have to add stuff to the mushrooms? how long and at what temp (celcius)

please be specific becz wenever i bake the fire brigade happns to be invited to my house yeah!
got in trouble twice so yeah!

You don't need to add oil or anything. And you probably ought to broil rather than bake them. But if you put them on a rack on a baking sheet (jelly roll pans work well, or if you have a toaster oven the little baking sheet with the rack that goes with would work perfectly) and broil them until the filling gets toasty looking then that should do it. You might want to put some aluminum foil under the rack, simply because mushrooms have a lot of moisture and they 'weep' as they get hot. Plus the aluminum foil, if put shiny side up, will reflect a lot of the heat onto the underside of the mushroom and toast the bottom quite nicely for you as well. Just make sure you watch the process carefully - even crack the oven - because the broiler can burn things quite quickly if it's not watched. The heat is direct so you don't have to worry about it not cooking if the oven door is cracked a little. Good luck!
