How Often Can You Work A Piece Of Pizza Dough?!


Question: How Often Can You Work A Piece Of Pizza Dough?
I've just started to make my own pizza and while they're OK'ish I want to develop a good shaping technique.

At the moment there are three instruction video I'm looking at:

http://www.finecooking.com/videos/how-to-shape-pizza.aspx (I find this dough rather sticky but then maybe my conversion from American to UK measurements is a little out)
and finally http://www.youtube.com/watch?v=_9mWUPiWAUQ&feature=channel
each video offers good suggestions.

But of course you have to practise and not wanting to waste precious flour I'm wondering how many times you can actually work a piece of dough until it is no longer fit for purpose.

The rolling pin, of course, would seem the simpler way to go but I have to be honest and say that I'd prefer to do it a little bit more stylish - you can't show off with a rolling pin!!

Pizza dough does not really like to be worked. Something to do with it breaking down the gluten in it or something. I am not sure why but I know from experience. Just practice away until it doesn't wanna be worked any more!

Buy cheap flour and you will be ok!



Flour is cheap.

Make the pizza after the dough. Make notes then make it again another night
