Ingredients
1 pound hickory-smoked bacon, diced

3 large eggs

Method
Bring a large pot of water to the boil.
Sauté the bacon in a small skillet until crisp. Remove with a slotted spoon and drain well on a paper towels.
Season the boiling water with a handful of kosher salt and add the linguine. Give everything a big stir and cook, stirring occasionally until al dente.
Meanwhile, whisk the eggs thoroughly in a large serving bowl.
When the pasta is done, drain and pour into the bowl of eggs and begin tossing it. As the strands of pasta become coated with the beaten eggs, their heat will cook the eggs.
Sprinkle with the bacon and parsley and serve immediately. Pass the pepper mill and Parmesan at the table
