It really won't get crispy. The "crisp" that you're getting on the outside of fried food is the oiled flour and spices.

Get some fried chicken recipe for the flour you use, put it on the chicken and fry it.



Unless the chicken is very fatty, it won't fry at all.

In fact, with nothing in the skillet except chicken, you will probably end up with a burned mess sticking to the skilled. Burned on the outside and near raw in the center.

Frying, by definition, involves cooking a food in oil or other fat. Despite the current recipes proclaiming themselves to be "Oven Fried"-this or that, if it is not cooked in fat, on a stove-top, it really is not fried at all.

Properly done, fried foods are not excessively greasy. If you try cooking in oil that is not hot enough the result is the infamous and universally despised greasy food.

If you are attempting to cook healthier, there is an alternative to deep fat or pan frying. , it is sauteing.

To saute boneless skinless chicken breasts, thaw and pat dry your chicken. Season with salt, pepper and any other seasoning you like, I generally add a liberal dash of garlic powder and chili powder.

In a skillet, over medium-high heat, add two or three tablespoons of olive oil. Don't use enough oil to totally cover the bottom of the skillet. After the oil is hot, put the chicken in the skillet. (Don't overload the skillet or it will cool things down too much, no more than three or four pieces in a large skillet.) Cook for three or four minutes to get a good sear and a bit of color before turning and cooking a like time on the other side. Reduce heat to medium and cook, turning from time to time, until the internal temperature reaches 165*F or juices run clear when you stick a fork in the chicken,

Result, boneless chicken breasts that are golden brown and delicious, without breading, and not greasy.

You can do that.
The chicken will be tasteless without some spices sprinkled on it.
You will have to put about 1/2 cup of water in the fry pan and cook on low heat, maybe even cover it while it cooks. It really does not get greasy, but chicken does have juices that will come out while it cooks.
It can dry out if you do not add some moisture that is why I say add a little water to your fry pan.
Another ingredient to have on hand is chicken soup base, in powder form.
This can be added to the water that you put into fry pan, if 1/2 cup water, use 1/2 tsp soup base. You should as chicken frys spoon juices over your cooking chicken, that will at least give flavor to your chicken.



It won't get greasy, it will just stick to your pan.

If you want to cook the chicken with out oil...steam it or
put it in the oven at 350 until the juices run clear or
put it on the grill.

if you put it in a pan without oil, its called searing/browning.

and no, it doesn't get greasy... but it won't be cooked well, will likely be raw in the middle.
