Question: I was served a dish of fruiti de mare that had a clam with a broken shell and a un-opened clam.?
I discovered these when I was almost finished with the meal since the were covered up by the pasta and mussells. Should these clams ever be served or thrown out ?

Clams should be cooked.They open when cooked. I'm surprised that went unnoticed by the cook.



The broken clam shell could have broken when cooking. I am a fanatic about washing and examining clams so any broken shell would have been broken in the cooking process (and would be ok to eat). But, if you are unsure, then discard it. You should also discard unopened clams



You're right....Unopened clams should not be served. I actually work at a restaurant and we serve a clam and pasta dish. I always try to pick out the clams with closed shells..but I don't always see them...just watch for closed shells next time. If only 1 of the clams that was closed..don't worry....if all the clams were closed....you should of sent it back to the kitchen...

Unopened clams should have been discovered & tossed by the chef as they are cooked separately when making that dish. If that is a regular occurrence I'd find a different place to eat.
